If you are looking to enjoy something sweet this World Baking Day, we’ve got you covered.

1. Turkish Coffee Cake With Dates

For World Baking Day this year, why not start off with a bang? A Turkish coffee cake with dates has an alcohol-free tiramisu texture, sweetened with dates. For this delicious cake, you will need:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon Turkish coffee grounds (finely ground)
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup Greek yoghourt
  • 1/2 cup chopped dates

If you are looking to add some extra flavour to your cake, then you can also make a coffee glaze to match. Using Turkish coffee again, you will need:

  • 1/4 cup brewed Turkish coffee (strong and cooled)
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Now for the fun bit – making the Turkish coffee cake. This cake will take 15 minutes to prep, and will be ready after 25-30 minutes in the oven. If you have a spare 40-45 minutes, this Turkish coffee cake is the perfect way to celebrate World Baking Day.

Baking Method:

  1. Preheat the oven to 175°C. Prepare a 9-inch round cake pan.
  2. Whisk flour, baking powder, baking soda, salt, and Turkish coffee grounds in a bowl. Set aside.
  3. Cream softened butter and sugar until fluffy. Beat in eggs, one at a time, then add vanilla.
  4. Gradually add dry ingredients to wet, alternating with Greek yoghurt. Fold in chopped dates.
  5. Pour batter into the prepared pan, smooth top, and bake for 25-30 minutes.
  6. While cake bakes, make coffee glaze: whisk brewed Turkish coffee, powdered sugar, and vanilla until smooth.
  7. Cool cake for 10 minutes in a pan, then transfer to a wire rack to cool completely.
  8. Drizzle coffee glaze over cooled cake, let set for a few minutes, then slice and serve with Turkish coffee.

2. Turkish Delight Ice Cream Recipe

With the weather heating up, who could say no to a luxury Turkish Delight ice cream? Made with real Turkish Delight, this ice cream recipe is a must this summer. To create this delicious dish, you will be using rose water, which would pair perfectly with our Rose Turkish Delight. For the ingredients, you will need to grab:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 1/4 teaspoon salt
  • 1 teaspoon rose water
  • 1/2 cup luxury Turkish delight, chopped into small pieces
  • 1/4 cup pistachios, chopped (optional, for garnish)

For the method, you will need too:

  1. Combine cream, milk, and sugar in a saucepan. Heat until simmering, then remove from heat. Whisk egg yolks in a bowl, slowly add hot cream mixture to temper. Pour tempered eggs back into the saucepan, cook over low heat until slightly thickened, about 5-7 minutes.
  2. Remove from heat, stir in salt and rose water. Chill mixture for at least 4 hours.
  3. Churn in ice cream maker, adding chopped Turkish delight during the last few minutes. Transfer to container, freeze until firm.
  4. When ready to serve, scoop the Turkish Delight ice cream into your chosen bowl or cone and then garnish with chopped something tasty – we love pistachios!
